Everyone loves chocolate & peanut butter - so we’re sure you’ll love this recipe too! This snack and dessert recipe is a recreation of a recipe from @frommybowl Instagram account - with our own delicious products!
These Homemade Vegan Snickers Bars are a lovely treat to have at home, especially if you have children who want to buy every chocolaty product they see in the grocery store!
Ingredients:
For the Caramel Layer:
- 1 packed cup (280 g) Otto’s Medjool Dates
- 2 tablespoons Manilife Deep Roast Smooth Peanut Butter
- 1 teaspoon Nielsen Massey’s vanilla extract
- Salt to taste
For the Nougat:
- 1/4 cup (75g) date caramel, above
- 2/3 cup (68g) oat flour*
To Finish:
- 1/2 cup (70g) unsalted roasted peanuts
- 225g Montezuma's Lordy Lord Cocoa Nibs Dark Chocolate
Instructions:
- Prep: Soak the dates for 5-10 minutes in hot water. Drain the dates, but reserve the water for step 2.
- Make the Caramel: Drain any excess liquid off of the dates and add them to a food processor. Add in the peanut butter, vanilla, and salt. Process until thick and smooth. If the mixture is too thick, add in the reserved date water in 1 tablespoon increments until you get an evenly smooth mixture.
- Make the Nougat: Remove the date “caramel” from the food processor. Add the oat flour to the food processor with 1/4 cup (75 g) of the caramel and process until well incorporated. This should form a slightly sticky “dough”.
- Assemble & Freeze: Firmly and evenly press the nougat into a small and narrow container. Use a spatula to spread the remaining caramel evenly over the nougat, then top with peanuts. Press peanuts into the date “caramel” layer. Freeze until firm for 60 mins.
- Make Bars: Cut the frozen “filling” into bar-sized pieces. Return these to the freezer while you melt the chocolate.
- Chocolate: Coat the bars in chocolate and place onto the baking sheet.
- Serve: Place the bars in the fridge for 5-10 mins.
